And a great Thanksgiving tradition,
my buddy, Bob Kelly, the bass player
for Wicked Liz and the Bellyswirls
offers up this scrumptious recipe for
his Sweet Potato Casserole. He said
that he has to triple the ingredients
if he's making it for his brother,
Leo Kelly, and his family.
Bob Kelly's Sweet Potato Casserole
3 c. mashed sweet potato
1/3 c. firmly packed brown sugar
1/3 c. milk --skim
2 Tbs. butter
1 tsp. vanilla
1/2 tsp. salt
2 egg whites lightly beaten
veg.cooking spray
1/2 c. firm brown sugar
1/4 c. flour
1/3 c. pecans
2 Tbs. Chilled Butter
Combine the first 7 ingredients in a
bowl. Stir well.
Spoon mixture into an 8 inch square
baking dish coated with cooking spray.
Combine brown Sugar & flour, cut in
the butter (I mash the butter in with
a fork until it's crumbly)
Stir in pecans
Sprinkle over potato mixture.
Cook at 350 for 30 minutes.
