A lot of new good restaurants have come to Las Vegas over the past 10 years. Many are restaurants that started elsewhere - Los Angeles, New Orleans, Chicago, New York. One of the best of the new ones is Gallagher's Steak House in the New York New York casino/hotel.
Gallagher's is an off-shoot of the original Gallagher's Steak House in New York City. They age their beef on the premises and do all their cutting there, as well.
I've been to Gallagher's on a couple of occasions. The first time, I had the prime rib which was cooked to perfection. The second time, I had their center cut filet, which was also very good. Their creamed spinach is excellent as well.
They have a pretty good wine list, can't remember much about it other than the prices were what I would deem as reasonable.
It's not a cheap place, and it is kind of dressy. The wait staff is great and attentive, the food is great and the atmosphere makes you feel like you're really in New York City.
