We were invited to a "Christmas Cookie Exchange" party by the neighbor guys, Steve and Dave, who live caddy-cornered behind us. The term "cookie exchange" is code for "Let's Party!" The idea is to take some cookies and to take an appetizer. My daughter Sara and Cindy did the cookies, and it was up to me to make an appetizer. So I did some research and came up with this concoction that turned out pretty damn good.
2 ripe avacados
1 - 8 oz. packages of Cream Cheese
4 oz - fresh or frozen spinach
1 package Guacamole mix
1 - 4 oz can chopped green chiles
1 medium tomato diced
1 cup green onions
1/2 cup cilantro
2 garlic cloves smashed
1 tablespoon lime juice
2 tablespoons Tabasco Chipotle Sauce
If spinach is frozen, thaw to room temperature. Squeeze as much water out of the spinach as possible.
Soften and cream the cream cheese in a mixing bowl. About 2 minutes on medium.
Halve the avacados and scoop out the meat into the mixing bowl. Mix with cream cheese.
Add spinach, guacamole mix, diced tomatoes, garlic, onions, chiles, lime juice and Tabasco sauce to mix. Mix on low for one to two minutes.
Set in refrigerator for one hour. Serve with tortilla chips.
