I've come up with a recipe that works tremendously well as a homemade marinara sauce. In fact, I very rarely buy marinara in the jar because I like this recipe so well. I think you will to when you give it a try.
Will's Marinara
1 - 28 oz can of whole or peeled tomatoes
1 - 6 oz. can of tomato paste
1 medium onion - chopped
2 to 3 cloves of garlic - chopped
2 tbs - Italian Seasoning mixture
1 tsp - sugar
1 tsp - salt
2 tbs - olive oil
6 to 8 ounces beer - (American lager - Budweiser works well)
Drain tomatoes into bowl and mash with a fork. Set aside.
In a four quart stove top pan, add olive oil and put on medium high heat. Add chopped onion and garlic and stir occasionally for about five minutes. Reduce heat to medium low and add tomatoes, tomato paste, Italian seasoning, sugar and beer. Simmer for 45 to 60 minutes on low, adding more beer if too thick. Tomatoes should begin to break up and that's about the time you know it's ready.
