Zia's on The Hill in St. Louis makes a dish called Pasta Tuttomare that is one of my all time favorite things to eat. If you like seafood pasta in a white cream sauce, this is just great. This recipe serves 4.
16 to 24 oz. Linguine noodles cooked al dente (that means nearly cooked all the way, but still with some chewy-ness to them)
8 oz. Shrimp
8 oz. Clams
16 oz. Crabmeat (may substitute with sea legs)
1 cup sliced mushrooms
8 tbls.butter
2 tbsp. Minced fresh garlic
1 tsp. Cracked red pepper flakes
1 tsp. Fresh ground pepper
1/2 tsp. Salt
16 oz. Heavy whipping cream.
Process:
In a 6 quart pan, melt butter. Add garlic, spices, seafood and mushrooms. Saute over medium high heat until seafood is fully cooked.(aprox.2-3 minutes). Add cream and bring to full boil. Add linguine noodles and return to full boil for approximately 2 minutes. Remove from heat and allow to rest. Place in warm pasta bowls and top with freshly grated parmesan cheese and lemon wedge.
