When I had some friends over for the beef brisket when Cindy was in Europe, I wanted to make an appetizer that was sort of unique. I started to look around on the internet and saw a number of stuffed jalapeno recipes and decided to do something above and beyond what I found. So I came up with the following recipe - Sausage Stuffed Jalapenos Wrapped in Bacon. It's pretty easy to do. And I included step-by-step pictures along with the recipe.
12 full-sized jalapenos
1/2 lb. Italian sausage uncooked
1 cup grated Mozzarella or Italian-blend cheese
4 to 6 slices of uncooked bacon
You can either cook these in the oven, or on a Weber grill over indirect heat. Either way, make sure the oven or the Weber grill is heated up to 350 degrees (F).
Clean the jalapenos under running water and pat dry. With a pairing knife, cut a triangular wedge out of the top of the jalapeno.
Clean all the seeds out of the jalapeno (the seeds are what causes it to be real hot).
Take some of the Italian sausage and place it in the pepper.
Cut the bacon into thirds or halves. Wrap and secure with toothpick. You can use the toothpick to pick them up off the plate.
I did these on the Weber grill and let them cook for about 30 minutes, making sure the sausage was cooked through and the peppers were soft, but not mushy. I'm telling you, these things went so fast between the six guys at the dinner, I didn't have time to take any pictures. They turned out damn good. They had a little spicy kick to 'em, but nothing bad.
Easy to make, fun to eat.
